this is a favorite dish my boyfriend makes for me. He has his own special ingredient's he won't share with me, which is ok because I prefer him to cook it.  it's very tasty! he calls it chicken zucchini squash parmesan stir-fry. super fresh! ask for the recipe if you like, he will share with you!

I am in a real ducky mood at the moment.  The sucess of the braised duck I made over the weekend, inspired me to attempt "making" duck confit. 

Oranges and duck go very well together.  So I decided on making a duck salad!  It is a quick whipup after work.  One duck leg was enough for dad to have for dinner last night and I had enough for a salad today at work!  I love a good packed lunch.  I love packing a nice little gourmet lunch to work...it just makes the day a better one.  

This meal took all of half an hour to whip up at most.  A great after work dinner meal...something light.

The first time i had pumpkin soup, I was in love. Its intense orangey colour, smooth, silky texture- did i mention it was out of a can?

Yup, so until i made my own pumpkin soup, i had never had it freshly made and boy was i blown away by the homemade version.

This particular pumpkin soup has a wonderful flavour from both the pumpkin and lentils which gives it a rather hearty and healthy feel. Topped with caramelized onions and slices of warm, crusty bread, it was delish and had us going back for seconds.

I had these beautiful Lamb T-bones so for dinner tonight I decided to marinated them in garlic, herbs de provence, lemon juice and olive oil. Grill em and make a Moroccan style couscous but without the couscous. I've been wanting experiment with Quinoa, a small spiral like South American grain, since I have cut any kind of gluten out of my diet including, of course, couscous. I made it with apricots, raisins and toasted pine nuts after sauteing onions and cumin seeds in olive oil and butter, added chicken stock, the quinoa, fruit, and some crushed corainder. Cooked it till fluffed, about 20 min. and mixed in the pine nuts. I think clove and cinnamon would have been a nice touch too. Also, I noticed that the fruit got a bit mushy, if you want it firmer, put it in 10 minutes before done, though the mushy  fruit actually flavored the dish better.

Served it with a Greek salad: Romaine lettuce, grape tomatoes, cucumber, chopped flat leaf parsley, vidalla onions, pepercinis, greek olives, and French feta. Tossed with golden balsamic, olive oil and  again herbs de provence. Fresh herbs are always best but I used what I had on hand.

Got a small box of Canale chocolates from a friend...can I say the flavours were really unique.  From earl grey flavoured ones, cherry brandy, and my favourite...white chocolate with passionfruit filling.

The presentation played a part...it was so pretty...i paused for a moment before digging in.

nothing makes insomnia more productive than a batch of honey almond shortbread cookies.
the honey and nuts give the cookies a flavor reminiscent of baklava.

i had trouble falling asleep in the california summer heat so i got up and whipped up some-a these babies. in addition to my nighttime baking, i've been cooking up a storm on the nintendo ds. i just can't stop; i'm a cooking machine! no, i haven't been playing cooking mama -- though i've already beaten both one and two -- i've been playing gourmet chef. if you know nothing about french cuisine, you can pretend you do with this game. it's a little more challenging and slightly more realistic than cooking mama (though, some of the stories that go along with the challenges can be kind of ridiculous...it's the translation methinks), AND it even has recipes for all the things you make just in case you did want to conquer these challenges in real life.
